Warm, rustic, and healing. Going into college finals with this awful sickness that’s going around leaves me without time or energy to dedicate to my health through cooking. Ironically, that is when we all need it the most. The more you run yourself ragged, the more your body is screaming for some assistance to put you all back in order. I won’t bore you with the science behind it (it’s a bit, um, unsavory. haha), but making a hearty soup is literally one of the best things you can do for a body in distress. Soak white beans for two to three days. (Not necessary, but it helps break down the membrane histamines) Chop parsnips, carrots, potatoes, cellar onions and as much garlic as you can tolerate (Yum, yes!) Chop ham and bacon and crisp it up in cast iron. Throw this all in a slow cooker with that chicken foot stock you made last month…. Forgot to make it?! Any stock will do 😉 Simmer until it’s all tender, about 4 hours. Top with chili flakes and fresh thyme. Cheers to your health! -@ThePrimalFocus
