Summer focuses on fresh greens, melons, light squash, spicy chilies and myriad species of water rich produce. I think real creativity comes from scarcity. There is something special about the winter here in the Pacific Northwest. We move in to deep cold, with sweet apple, rich legumes, cellar roots, and residual bounty of fall harvested meats. Food becomes more simple, hearty and sustaining. I love this dish of slow roasted pork shoulder, crisp apple, wok tossed peas, and caramelized onion with a bright preserved citrus aioli.
