CSA Newsletter – 6/10/20
How was the first week of farm food?
Did everyone enjoy their first CSA share? We hope you had an awesome week cooking in the kitchen, embracing your culinary talents, and enjoying the flavors our farm has to offer.
Our week consisted of beautiful lunches prepared by our chef, new baby cows, volunteers galore, and lots of lettuce wraps! One thing we love about the CSA is that our chef and our farm interns/apprentices are working with the same ingredients you are. We love sharing photos of their culinary creations through the week to help inspire you at home. Keep sharing your photos on our Facebook group to help inspire all our other CSA members!

Thank you all for being so willing to embrace our new CSA model last week! With the recent hail storm we were looking for an alternative way to ensure our members received the right amount of veggies in their share while allowing for flexibility in our harvest numbers. We were happy with how this model worked and we will continue to use it for the rest of the summer CSA.
When you arrive at the market or at the Farm Store, you will be able to choose a certain number of items based on your share size (small or large). Each week that number will vary. Those numbers will be posted by the display and communicated to you by Sarahlee or Alison. We will display all of our items for you to be able to choose what you want to take home with you for the week! This week we have a wide array of veggies for you to choose from! We have lots of magenta lettuce, salad mix, yukina savoy, carrots and more! Keep reading for a few recipes to inspire you for the week.
Keep bringing lots of bags for bulk greens! Remember to sanitize your bags before picking up your share and wash your hands before entering the Farm Store or picking out your food at the market.
We have begun to serve farm to table lunches on our Farm Store deck again! On Thursdays, Fridays, and Saturdays you are more than welcome to come out for lunch from 12-2pm. Lunch is prepared by our chef, Travis Taylor, and one of our farm interns/apprentices.
We are also now hosting intimate Farm to Table dinners. Our first one is this Friday. We will be theming our dinner around the pollinators of this world! The menu will be infused with our honey and we will take a farm tour and talk about BEES! Check out our event calendar for dinner tickets and other events.

The carrots coming out of the ground are feeling sweeter and crunchier than ever! But let’s not forget about those beautiful green tops. They can be made into a tasty pesto. Honestly this pesto goes wonderfully over roasted carrots. A whole carrot meal! If you want, feel free to freeze your pesto to use at a later date!
Still have Yukina Savoy in your fridge?? Are you ready for MORE? Yukina is one of our flagship veggies and it grows well in Central Oregon this time of year. Many of them have bolted and have long, lengthy stems that are totally edible! This cream of Yukina Savoy soup uses all of the plant for a tasty, creamy dinner. As always, thank you for being an incredible CSA member. We appreciate your support, excitement for the new season, and true compassion for our farm. We work hard every day because YOU motivate us!
Thanks,
Rainshadow Organics Crew.
