Who doesn’t love tacos? Show me someone who declines a taco and I’ll eat theirs too! Never having dealt with chicken feet before, I thought, why the hell not? Literally anything is good in a taco. When I lived in Mexico, I had stomach tacos, tongue tacos, ankle tacos…You name it, I probably ate it. And even though it sounds yucky, almost every other culture besides America truly eats THE WHOLE ANIMAL. Nose to tail eating is responsible, sustainable, and honestly, pretty damn tasty. Don’t be afraid! Put your best foot forward! ;)Cook the feet down half way and clip off the nails and black foot beds. Cook longer until the foot is tender and the bones pop out easily. Chop and fry with cumin, smoked paprika, garlic, oregano, cayenne, and onion salt. I made them the way we had them in Mexico, with just a little red onion, cilantro, jalapeno, and lime (Oh, and with Sarahlee’s greens, because they are spicy and crisp and flesh out these tasty li’l things)
